Coriander Flatbread

Yep, as good as it sounds.

150g plain flour

1 1/4 tsp sodium bicarb

1/2 tsp salt

1/2 tsp garlic powder (or a clove of garlic finely chopped)

2 tbsp chopped coriander, incl leaves and stems

3 tbsp aquafaba (that’s chickpea water to you and me. Who knew?)

2 1/2 tbsp soya milk

1/2 tsp lemon juice

1 tbsp olive oil

  1. Mix the dry ingredients in a bowl, and wet ingredients in a jug
  2. Transfer contents of jug to bowl
  3. Mix together to form a dough, knead in the bowl for a minute or two
  4. Leave to rest, covered for 5-10 minutes
  5. Divide dough to required portions – flatten with the heel of your hand
  6. Heat an oiled frying pan. Place breads in pan, cover and cook for 2 minutes, turn them and cook for another 2 mins or so
  7. Golden brown? Crunchy outside? Soft in the middle? Done!
